Carrot Cake Cookies
Carrot cake is an indisputable classic and beloved American dessert. Delicious and nutritive, those cookies taste just like it. Their tenderness makes them absolutely irresistible!
- 2 eggs
- 1/2 cup unsweetened soy milk
- 1/4 cup canola oil
- 1/3 cup brown sugar
- 1 tbsp molasses
- 1 cup finely grated carrots
- 1 cup whole wheat flour
- 1/2 cup instant oats
- 1/2 cup textured vegetable protein (tvp)
- 2 tsp cinnamon
- 1.5 tsp baking powder
- 1/4 tsp ground nutmeg
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a medium-sized bowl, whisk together the eggs, the soy milk, the oil, the sugar and the molasses.
Stir in the grated carrots and then gradually incorporate the rest of the ingredients using a spatula.
Drop the dough by rounded tablespoonfuls onto the baking sheet.
Bake for 12 minutes or until lightly browned around the edges.
Remove from the oven and allow to cool for about 5 minutes. Enjoy!
