Coconut, Pineapple & TVP Iron-Rich Granola
Top your favorite yogurt with this easy, homemade coconut and pineapple granola. It's hearty and perfect for snacking! Besides being absolutely delicious, it is also high in protein and fortified in iron.
Ingrédients
- 1 cup rolled oats
- 1 cup textured vegetable protein (tvp)
- 3/4 cup slivered raw almonds
- 3/4 cup sweetened shredded coconut
- 2/3 cup original soy milk
- 1/2 cup oatmeal dairy-free baby cereals
- 3 tbsp chia seeds
- 1 tbsp canola oil
- 1 tsp cinnamon
- 1/2 tsp salt
- 2/3 cup dried pineapple chopped
- Coconut sugar optional to make the granola sweeter
Instructions
- Preheat oven to 325°F (162°C) and line a baking sheet with parchment paper.
- Add all the ingredients, except the dried pineapple, to a large mixing bowl and stir to combine. Add some coconut or regular sugar if you would like the granola to be sweeter. Arrange on the baking sheet and spread into an even layer.
- Bake for 20 minutes, then remove from oven and turn the pan around so it bakes evenly. To keep this granola chunky, don’t stir during baking, or right after.
- Bake 5-7 minutes more, until golden brown and very fragrant.
- Turn off the oven and let the granola cool down inside for an additional 10-15 minutes to allow it to dry even further. Add the dried pineapple, break into clumps and enjoy!
- Store in a airtight container at room temperature or in the freezer.
