Crispy Oven-Baked Chipotle Potatoes
Fluffy inside with crisp, golden edges, and mild sour and spicy flavors, these potatoes are to die for! Roasted potatoes are a delicious side dish that goes with anything. But this time, why not get creative by coating them with a homemade chipotle sauce. You will impress all your guests, guaranteed!
Ingredients
- 2 chipotle peppers in adobo sauce
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp paprika
- 1 garlic clove
- Salt and pepper to taste
- 3-4 large potatoes cut into wedges, keeping the skin
Instructions
- Preheat the oven to 400°F.
- Blend all the ingredients together until a smooth sauce is obtained.
- Mix the potatoes with the sauce until well coated. Spread on a baking sheet covered with parchment paper.
- Bake for 40 minutes, stirring half way through.
- Dip them into some guacamole and enjoy!
