Energy Balls with Chickpeas and Peanut Butter
These little no-bake bites make a perfect on-the-go snack. High in fiber and protein, they will keep you full throughout the day. Besides being nutritious, they are also easy to make, creamy and incredibly tasty. Guaranteed to be your new favorite!
- 1 cup cooked chickpeas
- 1/2 cup unsweetened soy milk
- 10-15 dates depending on your sweet tooth
- 1 cup almond flour
- 1 tbsp ground flax seeds
- 2 tbsp peanut butter
- 1 tsp vanilla extract
- Extras: I used dried cranberries and chocolate chips this time
Blend the chickpeas, soy milk and dates until smooth and creamy.
In a big bowl, gradually incorporate all the other ingredients into the mixture.
Using your hands, form 12 small balls using 2-3 tbsp of dough each time. Refrigerate for at least 1 hour or overnight for better results.
