These whole wheat, maple-sweetened banana muffins are so fluffy and moist, no one will guess they’re packed with protein and healthy ingredients! They are made of basic ingredients and require only one mixing bowl. The secret to their nutritious boost is the addition of textured vegetable protein (TVP), which ups the protein content without sacrificing taste or texture. Give them a try to stay focused throughout your day or refuel after your workout!

Ingrédients
  

  • 3 ripe bananas
  • 2 eggs
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup maple syrup
  • 1/4 cup unsweetened soy milk
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 3/4 whole wheat flour
  • 1/2 cup textured vegetable protein (tvp)
  • 1/4 cup oats
  • 1/3 cup dark chocolate chips (optional)

Instructions
 

  • Preheat the oven to 325℉ (165℃). Grease a 12-cup muffin tin or line cups with paper liners.
  • In a large bowl, mash the bananas until smooth. Add the eggs, olive oil, maple syrup, soy milk, baking soda, cinnamon, vanilla extract and salt and beat well.
  • Gradually incorporate the flour using a whisk.
  • Add the textured vegetable protein, oats and chocolate chips and mix with a spatula, until just combined.
  • Divide the batter evenly between the muffin cups, filling each cup about three-quarters full.
  • Bake for 25 minutes or until a toothpick inserted into a muffin comes out clean.
  • Place the muffins on a cooling rack to cool. Enjoy or freeze them for later!
