15-Minute Vegan Creamy Miso Soup
This 15 Minute Vegan Creamy Miso Soup is for those nights when you need a quick, cozy and nourishing dinner. It is so flavorful and packed with umami richness that you’ll want to slurp up the whole bowl right away. See for yourself!
- 1/2 medium onion
- 2 garlic cloves
- 1/2 tsp fresh ginger (Do not put too much or the taste will be quite horrible!)
- 1 tbsp soy sauce
- 1 tbsp miso paste
- 1/2 tbsp tahini
- 2 cup unsweetened soy milk
Blend together all the ingredients with only 1 tbsp of soy milk until a smooth paste is formed.
Transfer in a sauce pan on medium heat.
Stir constantly as it becomes fragrant. Gradually incorporate the remaining soy milk. Continue stirring to mix through the paste. Heat up until ready to serve but do not boil! Boiling would destroy the probiotics in the miso paste.
I cooked the vermicelli on the side and roasted some tofu and broccoli in a bit of sesame oil. You can also add some edamame beans too if you have them on hand.
