These pancakes are soft, fluffy and crowned with peanut butter goodness! They are ready in 15 minutes and gluten-free if GF oats are used. You're going to want to make them every morning!

Servings 6 pancakes


  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1/4 cup ground flax seeds
  • 3/4 cup unsweetened soy milk
  • 1 egg
  • 2 tbsp peanut butter
  • 1 tsp vanilla extract
  • 1/2 tsp apple cider vinegar
  • 1/4 tsp baking powder


  • Mix everything together using a blender.
  • Pour about 1/4 cup at a time in a large pan and cook over medium heat for a few minutes on each side. The pancake is ready to be flipped when it does not stick to the pan anymore and the edges have become more cohesive.
  • Add your favorite toppings and enjoy!
