Simple Roasted Radishes
Radishes have that peppery kick that adds some extra freshness to salads. However, have you ever tried roasting them? Roasting brings out the sweetness that is otherwise masked. I'm quite sure it will rapidly become one of your favorite ways to serve this often forgotten vegetable.
Ingrédients
- 1 tbsp olive oil
- 2 branches fresh rosemary
- To taste salt and pepper
- 3 cups radishes cut in half
- 1/4 cup pistachios roasted or raw
Instructions
- Heat up the olive oil over medium heat. Add the branches of rosemary and let them fry for a few minutes until crispy. Turn them around half way through. Set them aside as they are or break the thorns apart.
- Add the radishes, the salt and pepper. Let them cook for a few minutes. Mix from time to time but not too much to allow some browning to occur.
- Once the radishes have browned a bit but are still crunchy, add the pistachios and let everything roast for an extra 1-2 minutes.
- I served them with some wild rice, grated and roasted tofu and some cherry tomatoes and it turned out delicious! Enjoy!
