Sunflower Seed & Chocolate Chip Cookies
Chocolate chip cookies are my go-to favorite dessert or sweet snack. These cookies have a chewy middle that will soften your heart with a few touches of crispiness from the sunflower seeds. You will fall right into the nostalgia of childhood bake sales. After a few simple steps and a quick bake, the only thing you’ll be missing is a glass of cold milk or some frothy coffee.
- 1 tbsp ground flax seeds
- 3 tbsp water
- 1/3 cup canola oil
- 1/2 cup brown sugar
- 3 tbsp soy milk
- 2 tsp vanilla extract
- 1 cup whole wheat flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 1/2 cup quick oats
- 1/3 cup sunflower seeds chopped
- 1/4 cup semi-sweet chocolate chips
Preheat the oven at 350°F and cover a baking sheet with parchment paper.
In a small bowl, mix the ground flax seeds and the water. Set aside.
In a large bowl, whisk the oil, sugar, soy milk and vanilla extract together until homogeneous.
Gradually incorporate the flour, cornstarch and baking powder using a spatula.
Add the remaining ingredients and mix again.
Using a spoon or an ice cream scoop, drop 12 equal balls of dough and press them down slightly to form cookies about 1.5 cm thick.
Bake for 20 minutes or until the edges become golden brown.
