Sunflower Seed & Chocolate Chip Cookies

Chocolate chip cookies are my go-to favorite dessert or sweet snack. These cookies have a chewy middle that will soften your heart with a few touches of crispiness from the sunflower seeds. You will fall right into the nostalgia of childhood bake sales. After a few simple steps and a quick bake, the only thing you’ll be missing is a glass of cold milk or some frothy coffee.

  • 1 tbsp ground flax seeds
  • 3 tbsp water
  • 1/3 cup canola oil
  • 1/2 cup brown sugar
  • 3 tbsp soy milk
  • 2 tsp vanilla extract
  • 1 cup whole wheat flour
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • 1/2 cup quick oats
  • 1/3 cup sunflower seeds chopped
  • 1/4 cup semi-sweet chocolate chips


  • Preheat the oven at 350°F and cover a baking sheet with parchment paper.
  • In a small bowl, mix the ground flax seeds and the water. Set aside.
  • In a large bowl, whisk the oil, sugar, soy milk and vanilla extract together until homogeneous.
  • Gradually incorporate the flour, cornstarch and baking powder using a spatula.
  • Add the remaining ingredients and mix again.
  • Using a spoon or an ice cream scoop, drop 12 equal balls of dough and press them down slightly to form cookies about 1.5 cm thick.
  • Bake for 20 minutes or until the edges become golden brown.
  • Enjoy!
