Sunflower Seed & Chocolate Chip Cookies
Chocolate chip cookies are my go-to favorite dessert or sweet snack. These cookies have a chewy middle that will soften your heart with a few touches of crispiness from the sunflower seeds. You will fall right into the nostalgia of childhood bake sales. After a few simple steps and a quick bake, the only thing you’ll be missing is a glass of cold milk or some frothy coffee.
Ingredients
- 1 tbsp ground flax seeds
- 3 tbsp water
- 1/3 cup canola oil
- 1/2 cup brown sugar
- 3 tbsp soy milk
- 2 tsp vanilla extract
- 1 cup whole wheat flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 1/2 cup quick oats
- 1/3 cup sunflower seeds chopped
- 1/4 cup semi-sweet chocolate chips
Instructions
- Preheat the oven at 350°F and cover a baking sheet with parchment paper.
- In a small bowl, mix the ground flax seeds and the water. Set aside.
- In a large bowl, whisk the oil, sugar, soy milk and vanilla extract together until homogeneous.
- Gradually incorporate the flour, cornstarch and baking powder using a spatula.
- Add the remaining ingredients and mix again.
- Using a spoon or an ice cream scoop, drop 12 equal balls of dough and press them down slightly to form cookies about 1.5 cm thick.
- Bake for 20 minutes or until the edges become golden brown.
