Vegan Butter Chicken (Butter Tofu)
This easy vegan butter ‘chicken’ alternative is made with tofu. Rich and savory, this meal is ideal if you are trying to reduce your consumption of meat. This creamy plant-based version is ready in 15 minutes and made with canola oil which is high in omega-3s compared to butter which contains mainly saturated fats.
- 1 bloc tofu
- 1/2 cup Passata (tomato puree)
- 1/2 cup water
- 1/2 cup unsweetened soy milk
- 2 tbsp canola oil
- 1 tbsp curry powder
- 1/2 tsp garlic powder
- To taste salt and pepper
In a skillet over medium-high heat, brown the tofu in the canola oil with the curry powder and the garlic powder. Add the Passata and the soy milk.
Bring to boil and simmer gently for about 5 minutes or until the sauce thickens. Add salt and pepper to taste. Serve with rice or naan bread if desired.
