Vegan French Vanilla Protein Waffles
Here's your new go-to waffle recipe for breakfast in bed, a brunch gathering, or just because. They require simple pantry ingredients and are very easy to make! They have a perfectly fluffy interior and are lovely and crisp on the outside. You won't be able to resist!
Ingredients
- 1 cup unsweetened soy milk
- 1 tbsp apple cider vinegar
- 2/3 cup whole wheat flour
- 1/3 cup textured vegetable protein (TVP)
- 2 tbsp ground flaxseeds
- 2 tbsp sugar optional
- 1 tbsp baking powder
- 1 tbsp French vanilla instant coffee Nescafé
Instructions
- Using a spoon, mix the soy milk and the apple cider vinegar together to create the buttermilk substitute. Set aside.
- Using a mixer or a coffee grinder, grind the TVP into a fine powder. Transfer into a medium bowl with the rest of the dry ingredients.
- Using a whisk, mix the dry ingredients and then gradually incorporate the buttermilk substitute until just combined.
- Heat up your waffle maker and pour the quantity of batter recommended. If you are using the Mini Waffle Maker by Dash as I do, 1/4 cup of batter is sufficient to fill the entire surface. Cook until ready.
- Top with syrup, fresh berries, whipped cream, nuts, Greek yogurt, fruit sauce, sliced bananas, chocolate-hazelnut spread or any other topping that you like! Enjoy!
