Vegan & Gluten-Free Chocolate Pancakes
I’ve been craving fluffy vegan chocolate pancakes for breakfast for quite some time. So one day, I started experimenting with the batter until I obtained this perfectly airy texture. Simple, easy, effective and tasty! It is pretty difficult to go wrong with those goodies!
Ingredients
- 1 cup unsweetened soy beverage
- 1 tbsp apple cider vinegar
- 1 cup quick oats finely ground
- 1/4 cup ground flax seeds
- 1 tbsp sugar
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a measuring cup, mix the soy beverage and apple cider vinegar. Let sit for 5 minutes.
- In the meantime, in a mixing bowl, combine the rest of the ingredients.
- Gradually whisk the wet mixture into the dry.
- Preheat a non-stick skillet over medium heat and pour about 1/3 cup of mixture at a time to form the pancakes.
- Cook until bubbles appear on the top, then flip the pancake over. Continue cooking until the bottom of the pancake is golden brown.
- Repeat with the rest of the batter.
- Serve with maple syrup and your favorite toppings.
