Vegan & Gluten-Free Chocolate Pancakes
I’ve been craving fluffy vegan chocolate pancakes for breakfast for quite some time. So one day, I started experimenting with the batter until I obtained this perfectly airy texture. Simple, easy, effective and tasty! It is pretty difficult to go wrong with those goodies!
- 1 cup unsweetened soy beverage
- 1 tbsp apple cider vinegar
- 1 cup quick oats finely ground
- 1/4 cup ground flax seeds
- 1 tbsp sugar
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
In a measuring cup, mix the soy beverage and apple cider vinegar. Let sit for 5 minutes.
In the meantime, in a mixing bowl, combine the rest of the ingredients.
Gradually whisk the wet mixture into the dry.
Preheat a non-stick skillet over medium heat and pour about 1/3 cup of mixture at a time to form the pancakes.
Cook until bubbles appear on the top, then flip the pancake over. Continue cooking until the bottom of the pancake is golden brown.
Repeat with the rest of the batter.
Serve with maple syrup and your favorite toppings.
