Vegan Pesto With Soy Nuts
This vegan pesto is cheesy, garlicky and loaded with flavor and freshness. I have replaced the pine nuts by soy nuts to increase the protein content and make it more affordable. Perfect with pasta or pizza, it is ready in less than 10 minutes!
- 2 cups fresh basil packed
- 1 cup soy nuts roasted and salted
- 1/3 cup olive oil
- 1/4-1/3 cup water
- 1/4 cup nutritional yeast
- 1 lemon juiced
- 3 garlic cloves
- Salt and pepper to taste
Transfer all the ingredients in a food processor. The water should be added gradually while pulsing until a smooth texture is obtained. Add salt and pepper to taste.
If serving with pasta, dilute the pesto with a few tablespoons of the cooking water. If added on a pizza, it can be spread as it is. Enjoy!
